Step 1
Add a rice cake to a parchment lined plate.
Step 2
Coat the rice cake evenly with peanut butter or nut butter of your choice.
Step 3
Add the cacao wafers and coconut oil into a small bowl and microwave in two, 30-second increments. Stir the mixture in between to prevent the chocolate from burning. Alternatively, you can also melt your chocolate in a small saucepan on the stovetop over medium low heat.
Step 4
Drizzle the melted chocolate on top of the peanut butter covered rice cake.
Step 5
Top with the rice cake with optional cacao nibs and sea salt and place in the refrigerator for 10-15 minutes, or until the chocolate is completely melted.
Step 6
Once the chocolate is cooled and hardened, enjoy it immediately!
