Step 1
In a large bowl mix together strawberries, yogurt, honey, and vanilla.
Step 2
Add scoops of the yogurt mixture (about 2 tablespoons each) onto a parchment-lined baking sheet. You should be able to make 10 clusters.
Step 3
Place the baking sheet with the clusters in the freezer for 1 to 2 hours.
Step 4
When the clusters are fully frozen, put the chocolate and oil in a microwave-safe bowl and melt the chocolate in 30-second intervals, whisking between each interval, until completely melted.
Step 5
Carefully dip each frozen cluster into the chocolate, making sure they are completely coated.
Step 6
Transfer back to the parchment paper. Repeat this process with the remaining clusters.
Step 7
Transfer the tray with the clusters back in the freezer for another 5 to 10 minutes to firm up the clusters.
Step 8
These keep in the freezer for 4 weeks in a freezer bag.
