Step 1
Put the minced ginger and garlic in a bowl and top it with boiling water. Leave to steep. Finely dice the preserved vegetables and roast the peanuts if required.
Step 2
Cook the kangkong in boiling water for about a minute until it wilts. Then cook the noodles according to the package instructions. Prepare to lay out your meal!
Step 3
Start by putting all the flavourings into the bowl. Mix well, then add the soup (I usually just use the noodle cooking water).
Step 4
Then put the noodles in and mix it a bit. The soup should just cover the noodles. Then add the kangkong, peanuts, preserved vegetables, and spring onions. Enjoy!
