Ingredients: 5 plum tomatoes, chopped; 1 medium sweet or Vidalia onion, chopped; handful of kalamata olives, chopped; 2-3 cups of fresh baby spinach leaves; 2 – 3 tablespoons balsamic vinegar; 2 – 3 tablespoons olive oil; salt and pepper to taste; 1 cup chickpeas, drained and rinsed (optional)

Add this Summer Spinach Salad with Tomato to your dinner plan this week!  A few ingredients and a light oil and vinegar dressing is all you need to add this nutritious salad to your meals.</em>

Chopped Tomato and Spinach Salad

plum tomatoes, chopped

medium sweet or Vidalia onion, chopped

kalamata olives, chopped

baby spinach leaves

balsamic vinegar

olive oil

salt and pepper

chickpeas, drained and rinsed (optional)

Combine salad ingredients in a large bowl.

To make vinaigrette, mix together balsamic vinegar and oil in a small bowl or jelly jar with lid. Season with salt and pepper. Drizzle desired amount over salad.

I have a plethora of tomatoes from Ella's garden now and yes - I don't need recipes but need ideas! So on point.

I live in the Philippines and can't always get the ingredients from my local market that are normally easy to find in a western Supermarket, but one thing there is plenty of is tomatoes.

I had to skip the olives (such a shame, but I'll pick some up the next time I go into town).

Fresh salads aren't popular here. Cooked vegetables is the norm, but this is so simple and delicious I couldn't resist giving it a try.

Next one to give a go is that fresh tomato sauce with pasta. It's a weekend job (pasta is for special occasions here.. lol).
