Step 1
Place the chicken thighs into a large mixing bowl. Add in the lemon juice, garlic, cumin, salt, pepper, cilantro and honey. Mix well to combine. Cover with plastic wrap and let it marinate for 30 minutes to 2 hours.
Step 2
Place the chicken on a sheet pan and place into the steam oven to cook for 20 minutes.
Step 3
Remove the chicken from the Oven.
Step 4
Place a grill pan on a stovetop on high heat. Add in 1 tablespoon of oil and let it heat up. Place the chicken into the grill pan and sear for 1-2 minutes on one side then flip to the other side and sear for about 1 more minute.
Step 5
Pour the drippings from the sheet pan in which the chicken was cooked into a skillet. Set it on medium heat and let it cook until the mixture reduces to form a glaze. Brush the glaze over the chicken.
Step 6
Serve the Cilantro Lime Chicken warm with a side of rice and a salad. Enjoy!
