This refreshing cucumber salad, made with lime juice and cilantro, is quick and easy to make and is great alongside steak or tacos.

Cilantro Lime Cucumber Salad

cucumber, sliced into thin strips

cilantro

lime, juiced

garlic,

sambal oelek (chile paste)

red pepper flakes,

salt

Mix cucumber, cilantro, lime juice, garlic, sambal oelek, red pepper flakes and salt together in a bowl until evenly combined; allow to sit until flavors blend, at least 10 minutes.

As another reviewer suggested, do mix up the dressing and then add your cukes.  Just enough heat, not too much, the lime juice brightens the flavor, and really brings everything together.  There are times when simple is best, and we enjoyed this recipe!

Easy and awesome salad! I tried this with and without the samba oelek; both are very, very good. The only thing I would suggest, if using the samba oelek, I would mix up the "dressing" and then add it to the cucumbers to get an even distribution. I used a spiralizer to cut my cucumbers. Made this last night. Super refreshing and zesty! Add some lime salt (buy at specialty spice shops) to it and wow!!!

Light and refreshing. Omitted pepper flakes and samba oelek. Added powdered garlic and radishes.

My husband and I love this recipe!  I think you will too!  So simple yet so yummy!

Used Asian garlic chili sauce. A bit too spicy, but seemed like it would be worth another try using 1/2 tsp.

Simple and delicious. Usually we don’t enjoy cucumbers and I had to cut another one.   Didn’t use Chile paste because we didn’t have any.  Excelent

This recipe sounded really promising so I tried it out. I used a homegrown cucumber which was on the smaller side. I used a vegghetti to spiralize it. Unfortunately I used a whole clove of garlic which ended up overwhelming all of the rest of the flavors. I used the juice from half of a lime I added a small mango and some sugar to offset the wicked sour taste. Next time I would consider using less garlic.
