Preheat oven to 375 degrees.

Spray a 9x13 baking pan with non-stick cooking spray.

Spread half the marinara sauce over the bottom of pan.

Dice onion and cook the onion and hamburger in a frying pan till cooked through.

While the beef and onions are cooking, prepare shells according to box, drain but do not rinse. Set aside to cool slightly.

In a medium sized mixing bowl, combine ricotta, 1 1/2 cups mozzarella, Italian seasoning, eggs, salt, pepper, and parmesan cheese. Stir together until combined well.

Add the cooked ground beef/onion mixture to the cheese mixture. Stir.
Step 8
Fill each shell with a heaping tablespoon of meat and cheese mixture.
Step 9
Place filled shells in prepared pan.
Step 10
Top filled shells with the rest of the marinara sauce.
Step 11
Sprinkle shells with remaining mozzarella cheese and then top with parsley seasoning.
Step 12
Bake for 20-25 minutes, or till cheese is bubbly and slightly browning.
Step 13
Serve immediately.
