Step 1

Preheat the oven to 425 degrees Fahrenheit (220°C).

Step 2

In a large bowl, beat the softened butter with the sugars using an electric or stand mixer until light and fluffy, about 5 minutes.

Step 3

Beat in the whole eggs one at a time at medium-low speed.

Step 4

Add the yolk, buttermilk, cornmeal, and vinegar and beat/whisk until smooth and well combined.

Step 5

Strain the mixture into the pie shell and bake for 10 minutes.

Step 6

Lower the heat to 300 degrees Fahrenheit (150°C) and bake for 40 minutes. It should be golden brown and slightly jiggly in the middle.

Step 7

Remove the pie from the oven and leave it to cool completely before slicing, about 1 hour.

Step 8
