Classic Deviled eggs are easy to make and are perfect for picnics, served as appetizers, or a snack.

Classic Deviled Eggs

mayonnaise

Dijon mustard

red onion

smoked paprika

dill pickle relish

Hard boil eggs if you have not already done so. Split eggs in half, and separate out the egg yolks. Place egg yolks into a medium sized bowl. Mince yolk with a fork until the yolks have a fine uniform texture. Mix in mayonnaise, mustard, red onion, smoked paprika, and dill pickle relish. Stir until well blended. Spoon mixture into egg white shells. Sprinkle with paprika. Top with capers if desired.

What can you do when you have a lot of hard boiled eggs? Let me tell you
what; you can make fabulous deviled eggs. I love to bring these to a party.
I don't know why, but people seem to think that they're exotic and
difficult to make. Let me tell you what, if you're going to a party or you
want to set out some appetizers, I think a plate of deviled eggs is one of
the most economical and least expensive little appetizer that you can make.
You can do them in a great variety of ways; you can add in just about
anything to deviled eggs. They're going to taste fabulous. Let me show you
how I make classic deviled eggs.

I have a dozen of boiled eggs here. I'm going to use mayonnaise. I have
about ½ cup of mayonnaise here, 2 tablespoons of Dijon mushroom, I'm also
going to use a little bit of smoked Spanish paprika. I really like the
smoked flavor, it adds a lot to this. I'm going to use capers to decorate
with, a little bit of red onion, and some dill relish. That's all I'm going
to use.

I'm going to chop this onion into fine pieces here. You don't want this to
be an onion appetizer, so dice very, very fine. Again, if you don't have a
red onion, perhaps shallots, or maybe a little bit of white onion to go in
here will be perfect. I'm doing about 2 tablespoons here. I'm not going to
use all of these, but I am going to use most. Go ahead, put these in the
bowl. The next thing we're going to do is we're going to go ahead and slice
our eggs and get those yolks out. We're going to drop those into the bowl.
Just go ahead and slice them the best you can. An easy way to get these out
is to just pinch them out, so that way you're not digging in there, and
sometime you can destroy the egg white.

The next thing we need to do is we need to go ahead and mash these egg
yolks very, very finely; the more fine you mash the egg yolks, the nicer,
smoother, and creamier the inside of the deviled egg is going to be. Go
ahead and take a few moments and mince, mince, mince with your fork. Once
you get this all nice and minced really fine, we're going to go ahead and
add in the smoked paprika. I really like this because the smoke adds a
really nice, complex flavor. If you don't have smoked paprika, regular
paprika also works. If you don't have that, salt and pepper is pretty good,
too.

In goes the mayonnaise, and the next thing will be the Dijon mustard.
Again, if you don't have Dijon mustard, you could use regular old yellow
mustard, it works well; I've done this many times. We're going to go ahead
and stir this up. I am going to go ahead and add about 1 tablespoon of dill
pickle relish. I like using the dill relish here because I like my deviled
eggs to be a little bit more savory. If you want them sweeter, you could
use sweet pickle relish.

Here is an easy way to do this: You can just simply spoon these right in.
You could put them in a piping bag and go ahead and get them all nice and
piped up, but we're just going to do it really simple. To decorate, I am
going to sprinkle on a little bit of that smoked paprika. Again, if you
don't have the smoked, just use the regular; it works out really good.

For some of these, I'm going to put on a caper. Capers just have . . . I
don't know, they're almost like little olives. They just have a nice little
burst, salty tang. I just love these.
