Step 1
Preheat oven to 375°.
Step 2
Butter a 9 x 5 loaf pan and set aside. You can use a little of the melted butter to do this. Just pour a little in the pan and grease the pan.
Step 3
In a large mixing bowl, stir the flour, brown sugar, baking powder, and salt. Combine well.
Step 4
Add half of the melted butter and the club soda. Mix until just combined with a spatula. Batter will be lumpy and dense.
Step 5
Pour into the prepared loaf pan and even out with the spatula. I don't like to smooth the top because those uneven little bumps make an incredible crunchy topping.
Step 6
Pour the remaining melted butter on top. If you want to ensure no butter oozes out onto your oven floor, you can line a baking sheet with foil and place the pan on the baking sheet.
Step 7
Bake for 1 hour.
Step 8
Turn out the bread on a cooling rack and let cool.
Step 9
Serve plain, with butter, or whatever else trips your fancy.
