Preheat oven to 180C. Line 2 large oven trays with grease-proof paper.
Step 2
Cream together the butter and sugar until pale and fluffy. Add in the egg and beat well until combined, add in the banana and beat for a few seconds to mix through.
Step 3
In another bowl, sift in the flour, then add the oats, sultanas and walnuts. Mix well to combine, then add the dry mix into the butter and sugar and fold through gently until all the flour is mixed through.
Step 4
Place the coconut into a bowl. Roll a tablespoon of the mixture into a ball and roll the ball into the shredded coconut to coat. Repeat until all the mixture has been rolled. Place the balls onto the baking tray about 5cm apart and gently flatten with a fork. Bake for 20-25 minutes, until golden. Cool on a wire rack and enjoy!
