In a large skillet over medium high heat add in oil

Once oil is glistening add in white and light green onions, coconut flakes and ginger

Cook, stirring often until coconut flakes begin to brown, about 2 minutes

Add in the coconut rice and stir until the rice is coated in oil
Step 5
Spread out in a single layer and allow to cook, undisturbed, until rice begins to crisp, about 5 minutes

Stir in dark green onions and cook for 1 more minute
Step 7
Remove from heat, transfer to a bowl and serve immediately.Note 1: Prepare the coconut rice ahead of time
