Step 1

Bring a pot of water to a boil. Add the soba noodles and cook according to the package instructions. Drain and rinse with cold water.

Step 2

Prepare the peanut sauce and set aside. Chop all of the veggies.

Step 3

Add the noodles, veggies and 1/2 of the peanut sauce to a VERY large bowl. Toss to combine. Add more peanut sauce to taste - or reserve to add to leftovers.
