Step 1
Soak and cook the pinto beans if using dry.
Step 2
Drain and rinse canned pinto beans.
Step 3
Add the pinto beans and the onion to a saucepan.
Step 4
Add the remaining ingredients.
Step 5
Bring to a boil.
Step 6
Turn heat to low and cover.
Step 7
Simmer, stirring occasionally and adding chicken stock or water to keep from sticking as needed.
Step 8
Simmer for 30 minutes, or until the onion is cooked and soft.
Step 9
Taste and adjust seasoning.
