Copycat Olive Garden Salad

¼ cup extra-virgin olive oil3 tablespoons mayonnaise1 tablespoon white wine vinegar1 tablespoon fresh lemon juice (from 1 lemon)1 ½ teaspoons granulated sugar1 teaspoon kosher salt¾ teaspoon black pepper½ teaspoon Italian seasoning1 garlic clove, smashed1 ounce Parmesan cheese, grated (about 1/4 cup)2 (5-oz.) pkg. American salad mix¾ cup pitted black olives¾ cup pickled pepperoncini½ cup thinly sliced red onion2 plum tomatoes, sliced1 (4.5-oz.) pkg. large seasoned croutons

Step 1

Combine oil, mayonnaise, vinegar, lemon juice, sugar, salt, pepper, Italian seasoning, garlic, and Parmesan in a food processor, and process until thoroughly combined.

Step 2

Combine salad mix, olives, pepperoncini, onion, tomatoes, and croutons in a large bowl. Drizzle salad with dressing; toss to coat. Let stand 5 minutes before serving.
