Step 1

Heat pecans in a nonstick pan over medium heat for 1 minute. Add in brown sugar and a pinch of coarse salt. Stir continuously for 2-3 minutes or until pecans are toasted and coated with the melted sugar.

Step 2

Place candied pecans on a baking sheet lined with parchment paper and let cool. Once cooled, chop pecans.

Step 3

Place all ingredients in a high speed blender or food processor and blend until smooth. Taste and adjust seasonings if desired.  Strain dressing using a mesh strainer for less apple pulp and a smoother dressing.

Step 4

Start with 2 cups of spring mix in each salad. Then in each bowl add in 3/4 cup diced chicken breast, 2 Tbsp cheese, 2 Tbsp apple chips, 2 Tbsp pecan pieces, 1/4 cup tomatoes, and 1 Tbsp red onion.

Step 5

Toss ingredients together, then top with homemade dressing. Toss again, if desired.
