Place water, cloves and vinegar into mixing bowl. Place prepared Varoma dish into position and weigh beef into it, ensuring beef fits comfortably and lid closes securely. Secure Varoma lid and cook 60 min/Varoma/speed 2.
Step 3
Set Varoma aside. Insert simmering basket into mixing bowl and weigh pumpkin into it. Place Varoma back into position. Weigh peas, corn and sauerkraut into Varoma dish around beef. Secure Varoma lid and cook 15 min/Varoma/speed 2.
Step 4
Remove Varoma and check if vegetables and meat are cooked to your liking. If needed, secure Varoma lid and cook for a further 6-10 min/Varoma/speed 2. Transfer corned beef and vegetables into a thermal serving bowl or other large bowl and cover to keep warm. Transfer 100 g of the cooking liquid into a jug and set aside. Discard remaining cooking liquid.
Step 5
Place all sauce ingredients, plus 100 g reserved cooking liquid, into mixing bowl and cook 7-9 min/90°C/speed 3, to desired thickness. Serve beef and vegetables drizzled with mustard sauce.
