Step 1
Preheat oven to 375°F and spray a 9-inch deep pie pan (if you don’t have a deep pie pan, use an 8x8 baking dish) with baking spray, place onto a baking tray and set aside.

In a saucepan over low heat, whisk cornstarch and sugar together. Add in blueberries, water, and lemon juice.

Continue to stir until thickened, set aside.

In a large bowl combine flour, sugar, baking powder, and salt stirring to combine.

Add in the butter, water, and egg, whisking to combine, it will be thin like a pancake batter.
Step 6
Pour the batter into the prepared pan.
Step 7
Carefully spoon the blueberry filling into the center of the poured batter.
Step 8
Bake the pie until golden and bubbly, about 30 to 40 minutes. Let the pie cool completely (preferably overnight) before slicing and serving. Serve with ice cream or whipped cream and enjoy!
