Step 1
Preheat your oven to 375°F (190°C). Lightly grease a large baking dish.
Step 3
In a large mixing bowl, combine the shredded chicken, cream cheese, half of the cheddar cheese, half of the Monterey Jack cheese, diced green chilies (if using), cumin, garlic powder, salt, and pepper. Mix until well combined.
Step 5
Lay out a tortilla on a flat surface. Place a generous amount of the chicken mixture down the center of the tortilla. Roll up the tortilla and place it seam-side down in the baking dish. Repeat with the remaining tortillas.
Step 7
In a separate bowl, mix the enchilada sauce and sour cream until well combined. Pour this mixture over the enchiladas in the baking dish, making sure they are fully covered.
Step 9
Sprinkle the remaining cheddar and Monterey Jack cheese on top of the enchiladas.
Step 11
Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly.
Step 13
Once baked, remove from the oven and let it cool slightly. Garnish with chopped cilantro and sliced green onions. Serve hot with a side of rice or salad.
