This mildly cheesy cauliflower soup is a favorite of mine. I make it often in summer, although it's good anytime. &mdash;Karen Brown, West Lafayette, Ohio

Cream of Cauliflower Soup

green onions (tops only)

butter

all-purpose flour

salt

chicken broth

cauliflower,

1% milk

cheddar cheese

dry sherry, optional

chives

In a saucepan, saute onions in butter until tender. Stir in flour and salt until blended. Gradually add broth. Bring to a boil; cook and stir until thickened, about 2 minutes. Reduce heat.

Add cauliflower; simmer for 2 minutes. Add the milk and cheese; cook and stir until cheese is melted. Stir in sherry if desired. Garnish with chives.

Great soup!  I made it with fresh cauliflower, regular onions, and added some instant potato flakes to make it really thick. Just  delicious!  I steamed the cauliflower first and puréed half and left the other half in florets.  Keeper!!!!

<p>This soup was awesome as is. The only thing I might have done differently is..I use my own chicken broth. Which has a wee bit of flame to it along with plenty of garlic. I also add 2-3 tablespoons of parsley. Oh yea..lol. I don’t use low fat..ever. I believe it’s unhealthy. I use old cheddar and table cream instead of the low fat suggestion. Wow!!</p>

Loves that it comes together quickly but is quite bland.  Added pepper and salt.  Also used a handful of shredded carrot and 1 leek as others recommended.   Sent some to family and granddtr liked it.  For leftovers I'll add some cubed ham and diced jarred roasted red peppers.  Kraft preshredded reduced-fat cheese melted just fine when added directly to cooked cauliflower before milk was added.   Will make again with other half bag of frozen cauliflower!

<p>Giving this recipe a "5 Wow"!  Am a retired guy who cooks for my wife who's a teacher and doesn't have the time at home to prepare suitable meals for herself.  This soup came out great the first time!  TOH hasn't let me down yet!</p>

Added leeks, used the whole green onions, used a bit more butter and flour, and went with 2 cups of cheese and it was fantastic.  Making a double batch next time because it went FAST.

Great soup with a couple changes from other reviews! Added potatoes, shredded carotts and regular cheddar. Used fresh cauliflower, cooked it with the potatoes first.

I gave this recipe 5 stars but only because I was inspired by it to go heavy cream and Sargento shredded sharp Cheddar cheese, along with my favorite Tony Chachere's Creole Seasoning, Sea Salt and White Pepper. This all came about because I had a couple of bundles of green onions from Christmas, along with 3 cups heavy cream. Seeing the potential for a decadent "fat" version of this soup, I tried it out. Definitely a keeper! Thank you for your inspiration to try this soup my way! Happy New Year to you all!

I made this last night, the flavor was good but made several changes to recipe.  Added 2 whole green onions plus 1/2 cup chopped onion; 2 cups of cheese plus 1/3 cup Velveeta.  I also had to add additional thickening and simmered for 1 hour.  Will make again.

lovely recipe-love soups-will try to get it donevat home or will try to get it in a big restaurant.

I thought this was good, but I made a few small changes: used low sodium chicken broth, cooked cauliflower a little longer, and added some instant potato flakes to thicken because it seemed watery. I would definitely make this again.

tHIS IS MORE A QUESTION THAN ANYTHING ELSE, THE CAULIFLOUR IS IT COOKED BEFORE?

I tried it with left over mixed vegetables. Works great

I made this without cheese and used lactose free milk.  I had to substitute vegetable broth because I was out of chicken broth and used a package of broccoli and cauliflower since that is what the store had.  Overall, very good!  I would definitely make this again.

This recipe looked so good but I wound up being disappointed. Like Rosaliemary, the low-fat cheese didn't melt,,,,I ended up with huge soft clumps of cheese with long rubbery strings. Plus, I used skim milk because that is what we drink so the soup was almost watery.( That was my fault.) I will try a different recipe in the future and will NEVER use low-fat cheese in a soup again!

Very good. A change of pace from cream of broccoli soup.

Love this soup!  It is my favorite soup ever! The only problem I had run into the first time I made it was that the reduced-fat cheddar cheese didn't melt into the soup, so now I use regular cheddar and it's perfect!

If you use low fat or fake cheese spray with veg. Oil spray or olive oil in your own mister. Every second of spray is 7 cal. But helps melt even fake cheese. Add a little crumbled crunchy bacon and try a little sharp or extra sharp cheddar. I wouldn't have 1% in my house. Our local dairy Braums has 2% that tastes better than whole milk from Walmart. Really good soup.

Just made it without the sherry. Love it!

very easy and good! used a box of chopped broccolli instead..and added 2 TBsp of hot sauce (love everything spicy),  and used fat free soy milk.
