Step 1
Wash leeks thoroughly, then slice in half lengthwise. Cut into 1/2" slices.
Step 2
Place pearl onions in boiling water for 3-4 minutes; rinse in cold water and peel. Set aside.
Step 3
In a large saucepan, melt 2 Tbsp. butter and add the washed and sliced leeks. Cook, stirring often, for 5 minutes.
Step 4
Meanwhile, steam the peas and the pearl onions for 5 minutes and drain. Add mixture to the pan containing the leeks.
Step 5
In a medium saucepan, melt 2 Tbsp. butter and stir in flour, making a paste. Gradually add the heavy cream, whisking constantly until mixture becomes slightly thick. Add seasonings
Step 6
When sauce is thick and bubbling, pour over peas, pearl onions and leeks. Stir and serve.
