When springtime rolls around, we are always on the hunt for a quick and easy recipe that makes a great sidekick to any meal. And when the temperatures rise, it&rsquo;s always nice to have a new way to serve the traditional salad recipe. Let&rsquo;s be honest, the same old greens can get tired and boring. That&rsquo;s why we were thrilled to taste the Test Kitchen&rsquo;s new spin on the broccoli slaw.  Whether you&rsquo;re prepping for a potluck or planning a casual backyard luncheon, this recipe, which serves ten, is sure to please. The base of this easy-to-prepare salad is a slaw mix that you can pick up in the produce aisle at the local supermarket. Our Test Kitchen suggests the broccoli slaw mix or a standard cabbage, carrot, and red cabbage slaw combination. We love the addition of the toasted pecans and scallions for adding a nice savory touch, and that satisfying crunch, and the golden raisins add an unexpected hint of sweetness. Our secret ingredient is the lemon zest which keeps the slaw vibrant and extra fresh. If you want to make this salad a main meal, we recommend tossing grilled chicken into the mix. This is a light, refreshing, and incredibly simple summer go-to recipe.

Creamy Broccoli Slaw

mayonnaise

pecans

golden raisins

scallions

apple cider vinegar

lemon

salt

black pepper

(12-oz.) pkg. broccoli slaw mix

Stir together mayonnaise, pecans, raisins, scallions, vinegar, lemon zest and juice, salt, and pepper in a large bowl until combined. Add slaw mix; toss gently until thoroughly coated. Refrigerate 30 minutes. Toss gently, and serve.


I'm serious about the 5-Star rating, pecans help everything, and the bacon idea is a good one too.   But, I would be remiss if I failed to second the motion of the reviewer that spoke up about an earlier reviewer's complaint regarding an absence of nutritional information.PUL-EEEASE!  The recipe accompanied a collection of hearty Game-Day serving ideas.  Dieting isn't really on anyone's radar while they are watching a game.   Besides, if she doesn't already know the caloric value of a cup of mayo, she doesn't have any business whining about the recipe's author neglecting to educate her.  She could always just add a few miles to her pre-game workout (because I'm sure she would have one).

Anonymous:  So let me get this straight. You clearly rated a recipe without trying it because of your nutritional information fetish. Figure it out!  It's not rocket science. Sheesh! Since I have to rate it in order to comment, I'm giving it 5 stars to offset yours.
