Name: Creamy Broccoli Soup (Frozen Broccoli)
Ingredients: 1/2 stick butter; 1 large onion, finely diced; 2 tablespoons all-purpose flour; 4 to 6 cups low-sodium chicken stock, water, or combination; One 10-ounce package frozen broccoli; 1/2 to 3/4 cup heavy cream; Salt and freshly ground black pepper

Melt butter in large, heavy pot over medium-high heat. Sweat onions, and stir in the flour until incorporated. Gradually whisk in the stock. Add the broccoli and bring to a simmer. Cook for 20 minutes. Finish with cream. Roughly puree with an immersion blender and season, to taste, with salt and pepper.

I used 14.4 oz. bag of frozen broccoli and only 4 cups of chicken broth. The soup was just a bit thin, so I added 1T. of cornstarch to thicken it. Tasted perfect even without salt/pepper.

This soup came out very good.  I used celery instead of onions and added more flour to thicken. Also only used 4 cups of vegetable stock.  So good on a cold wintery day.

I loved this soup. It was a little thin so I mixed about a teaspoon and a half of flour and margarine together and added it in to thicken it, plus the butter gives it a little more flavor. I also added a little nutmeg. Very good!!!!

I made this soup with about 6 cups of water and 5 chicken bouillon cubes.....probably should have used 5 cups of water, but it came out so very yummy.  I also tried topping it off with some grated locatelli parmesan and it was awesome!!

Very simple and a very nice flavor.  used 16 oz bag of broccoli and the 6 cup choice on the chicken broth and that was perfect.  Thickened up a little at end of simmering with cornstarch 2-3 tbs.  Kind of thin but a very nice flavor and delicious to drink in a mug on a cold day.

This soup is amazing. I would have never guessed broccoli could taste this good! Definitely a recipe to go in the books... Great piping hot, luke warm, or even cold!<br /><br />There should be a disclaimer for this recipe, however - this is a thin soup. Do not expect a super thick soup unless you're willing to boil it longer to reduce it.

I MADE THIS SOUP SEVERAL TIMES AND MY FAMILY LOVED IT.  IT WAS SIMPLE AND EASY.  THIS IS A KEEPER......

A little watery for my taste, but some extra flour fixed that up.
