Step 1
Cook pasta in a large saucepan filled with salted boiling water. Reserve 1 cup pasta water. Drain pasta. Set aside.
Step 2
Heat olive oil in a large frying pan over medium-high heat.
Step 3
Add chicken. Cook, stirring occasionally, for about 5-6 minutes or until the chicken is cooked through. Remove from pan.
Step 4
To the same pan, add garlic. Saute, stirring, for 30 secondsor until fragrant.

Add onions and bell peppers (capsicum). Saute, stirringoccasionally, for about 2-3 minutes or until soft and tender.
Step 6
Add chicken back in pan.
Step 7
Add ground cumin, red chili powder and ground black pepper. Season with salt. Stir fry for 1 minute.
Step 8
Add cream. Bring to a boil. Simmer for 2 minutes.
Step 9
Add parmesan. When cheese starts to melt, add cooked pasta and parsley. If the sauce is too thick, add pasta water. Toss. Heat through.
Step 10
Garnish with grated parmesan and parsley if you like.
