Step 1
Melt butter in boiling water. Add flour and salt all at once; stir vigorously. Cook stirring constantly, till mixture forms a ball that doesn't separate. Remove from heat and cool slightly.
Step 2
Add eggs one at a time, beating vigorously after each until smooth. Drop dough by heaping tablespoons 3 inches apart on greased cookie sheet.
Step 3
Bake at 450 degrees F for 15 minutes, in a slow oven of 325 degrees F for 25 minutes.
Step 4
Remove cream puffs from oven; split. Turn oven off and return to oven to dry out for 20 minutes. Cool on rack.
Step 5
Just before serving, fill with Vanilla pudding or filling of choice. Replace tops and sprinkle with powdered sugar.
