Step 1
Sprinkle both sides of the chicken breasts with Italian seasoning, onion powder, salt, and pepper.
Step 2
Lightly spray the inside of your slow cooker with nonstick cooking spray. Place the chicken breasts in a single layer at the bottom.
Step 3
In a bowl, whisk together the chicken broth, heavy cream, minced garlic, drained Italian tomatoes.
Step 4
Pour the sauce over the chicken. Cover and cook on high for 3 hours or low for 4 hours.
Step 5
During the final 30 minutes of cooking, gently stir in the thawed, drained spinach and the parmesan cheese. Cover and finish cooking.
Step 6
Taste and adjust seasoning with salt and pepper if needed. Serve over pasta, rice, or mashed potatoes.
