Step 1
In a large mixing bowl add leftover mashed potatoes, egg and cheddar cheese. Mix until combined.

With a cookie scoop place potato balls on a parchment lined baking sheet.

Place in the refrigerator for 20 minutes or up to an hour.

Remove potato balls from the refrigerator and roll each ball in panko flakes and place back on the baking sheet.

Spray the insert of the Air fryer with non-stick cooking spray and place the mashed potato balls in a single layer making sure the air can circulate (don't over crowd).
Step 6
Turn the air fryer to 375°F and set the timer for 10 minutes. Turn over the potato balls after five minutes. Cook until crispy.
Step 7
Place on a cooling rack and serve with dipping sauce or garnish with diced onion, parsley or chives.
Step 8
Place prepared potato balls on a parchment line baking sheet.
Step 9
Put prepared potatoes in the oven at 400°F for 10 minutes or until crispy. Turn balls once.
Step 10
