Step 1

Preheat the oven to 450°F (230°C). Line a baking sheet with foil or a silicone baking mat. Then place a wire cooking rack inside the baking sheet. Spray the rack with non stick cooking spray or brush it with olive oil.

Step 2

Pat chicken\ wings dry with a paper towel. Add to a large bowl and toss with the salt and baking powder until fully coated. Pat the wings dry with paper towels until they are no longer wet. Add them to large resealable plastic bag or in a large bowl. Sprinkle salt and baking powder over top in small segments and toss to completely coat the wings.

Step 3

Place the wings on the cooking rack that is placed inside the baking sheet. Be sure that the wings aren't touching each other for even baking.

Step 4

Place the baking sheet in the oven and bake for 20 minutes. Flip the wings over and continue to bake for 15-30 minutes or until they are nice and crispy. *For fall off the bone wings, bake until the internal temperature reaches 180°F (82°C).

Step 5

Remove the wings from the oven and toss them with your favorite wings sauce. Serve immediately.
