Step 1
• Adjust rack to top position and preheat ovento 425 degrees. Wash and dry produce.• Cut potatoes into ½-inch-thick wedges.• Toss potatoes on a baking sheet with alarge drizzle of oil, salt, and pepper.Spread out across sheet in a single layer.• Roast on top rack until browned andtender, 20-25 minutes
Step 2
• Meanwhile, trim and thinly slice cucumber.• Transfer cucumber to a small bowl; add 1 tspsugar and ½ tsp salt (2 tsp sugar and 1 tspsalt for 4 servings) and toss to combine.• Set aside, tossing occasionally, until readyto serve.
Step 3
• In a medium bowl, whisk together sourcream and 1 TBSP water (2 TBSP for4 servings). Place flour in a shallow dish.Place panko in a separate shallow dish.• Pat chicken* dry with paper towels; placebetween two large pieces of plastic wrap.Pound with a mallet or rolling pin untilabout ½ inch thick. Season all over with saltand pepper.• Working one piece at a time, coat chickenin flour, then dip chicken into sour creammixture. Let excess drip off, then presschicken into panko until fully coated onboth sides. TIP: For less mess, use tongs todip and transfer.
Step 4
• Heat a 1/3-inch layer of oil in a large pan overmedium-high heat. Once oil is hot enoughthat a pinch of flour sizzles when addedto the pan, add coated chicken. Cook untilcrust is golden brown and chicken is cookedthrough, 3-5 minutes per side. (TIP: Fry inbatches if necessary; lower heat if chickenbegins to brown too quickly.) Transfer to apaper-towel-lined plate. Let rest for at least2 minutes.• AIR FRYER ALTERNATIVE: Coat an air fryerbasket with cooking spray; arrange coatedchicken side by side in basket. Coat topsof chicken with cooking spray. Air fry at390 degrees for 6 minutes. Flip chicken andcoat again with cooking spray; air fry untilcooked through and crispy, 6 minutes more
Step 5
• While chicken cooks, in a second smallmicrowave-safe bowl, combine hotsauce and 1 TBSP butter (2 TBSP for4 servings). Cover tightly with plastic wrapand microwave until butter is melted,20-25 seconds; stir until smooth.• Once chicken has rested, brush all overwith as much Buffalo sauce as you like.
Step 6
• Transfer cucumber to a paper-towel-linedplate. Cover cucumber with a secondpaper towel and press firmly to absorb anyexcess liquid.• Halve and toast buns.• Spread top buns with as much blue cheesedressing as you like. Fill buns withcucumber and Buffalo chicken.• Divide sandwiches between plates; servewith potato wedges and any remainingblue cheese dressing on the side for dipping.Ground Beef is fully cooked when internal temperaturereaches 160°.
