Peel and slice potatoes lengthwise into 1/4 inch slices. Stack a few and cut into strips. Place in a bowl with water. Soak 15 minutes.

Heat oil to deep fry potatoes. Drain potatoes and place them on a cloth, pat dry. Do this in batches. Place dried potatoes in a bowl and add salt, chili powder, garlic powder and paprika. Mix well. When oil is hot (350 F/180 C) and you are ready to fry - take the amount of potatoes that will fit into your pot at one time and place in a bowl. Sprinkle some of the rice flour to coat. Place coated fries gently in hot oil and fry for about 2 minutes until golden to golden brown. Drain on a paper towel lined plate. Keep coating small batches of seasoned potatoes in rice flour and fry. Serve with ketchup.
