Step 1
Place corned beef brisket fat side up into a 6-8 quart crock pot and sprinkle with provided seasoning packet.
Step 2
Mix garlic and Italian seasoning with the beef broth and pour around the brisket until it is almost covered.
Step 3
Cook on low for 5 hours and then quickly add the red potatoes, carrots, and onion. Don’t leave the top open for too long or you will lose too much heat in the crockpot.
Step 4
Continue cooking on low for another 3 to 5 hours (8-10 hours total).
Step 5
Once cooked, remove the brisket from the crock pot and let it sit for 15 minutes before slicing it, to allow the meat to rest.
Step 6
Garnish with parsley and serve warm with potatoes, onions, and carrots.
