Preheat oven to 350 F.
Step 2
In a large bowl, whisk together eggs, milk, heavy cream, salt, and pepper. Stir in cheese and set aside.
Step 3
Saute peppers and onions in a drizzle of olive oil until softened. Add spinach and cook until wilted.
Step 4
Stir cooked veggies and bacon into egg mixture.
Step 5
Pour into a greased 9x13 pan.
Step 6
Bake for 35-40 minutes, until center is set.
