Cucumber and Lemony Dill Cream Cheese Tea Sandwiches

cream cheese,

dill

lemon

salt and black pepper

white bread*

cucumber

In a small bowl, combine the cream cheese, fresh dill, lemon zest, and lemon juice. Season the mixture with salt and pepper.

Lay the slices of bread on your work service and distribute the cream cheese evenly among each slice, spreading into a thin layer. Arrange the cucumber slices in rows over 3 slices of the bread. Top with the remaining bread, and cut into quarters so there are 4 pieces from each sandwich. Serve immediately.

I hate when recipes use a "measurement" like the juice and zest of one lemon. Citrus varies in size and juiciness. That can affect the outcome of a recipe greatly. Instructions aside, I really liked this. I started with the juice and zest of half a lemon and added a little more till it was right. Delicious!

I made this for my guests at a kids party and everyone loved them, even the children. The taste is well balanced and it easy to make!

I just served these today for a ladies lunch/birthday party and everyone loved them!  I really like the lemon flavor and the fact that it's strong so you don't miss it!  I was even asked for the recipe!

The lemon seemed a bit much at first, but the sandwich was outstanding and several guests at my tea party requested the recipe.

too much lemon with both the zest and juice. I used the juice only/ no zest and the lemon was more than enough.

Loved these!  Made them for a tea party yesterday and they were perfect!  I was a bit worried about the lemon being too much - first taste of the cream cheese alone was quite strong.  So I just put a thin layer on the bread when assembling - as a result, the cream cheese mixture went a bit farther than expected.  But when all was done, they were the best! I even got requests for the recipe!

Made this for a friend and myself.  Loved the lemon twist to the recipe.  We both enjoyed the sandwiches.

I found these to be extremely lemony, even having doubled the amount of cream cheese and keeping the lemon as called for. I had that the thought as I was squeezing the lemon that it seemed a bit juicier than normal, but not so much that I thought it would be an excessive amount in the recipe. Adding mayonnaise helped balance. I should say that I did like the lemon twist on a classic tea-time recipe. Friends enjoyed the finished product quite a bit.
