Ingredients: 250 g cream cheese; 2 spring onions ((scallions)); 1 tbsp sour cream ((or yoghurt)); ½ cucumber - about 150g (seeds removed and rest finely chopped); 1 clove garlic(grated (I used 1 tsp wild garlic oil)); 1 pinch sea salt; 3 sprigs fresh mint or dill or both (finely chopped (can substitute for ½ tsp dried dill or ¼ tsp dried mint)); 3 large slices pickled jalapeño peppers (finely chopped)

Cucumber and cream cheese make for a cool and delicious combination. This recipe is an adapted Benedictine spread and it comes from Kentucky, USA. It&#039;s packed full of flavour and is ideal as a summer dip or sandwich spread.

g cream cheese

spring onions ((scallions))

sour cream ((or yoghurt))

cucumber

garlic(grated (I used 1 tsp wild garlic oil))

sea salt

mint

jalapeño peppers (finely chopped)

Place all of the ingredients into a mixing bowl and stir until everything is well combined. Alternatively place all ingredients into a food processor and pulse briefly until combined.

Use as a sandwich spread or dip for crackers and crudités.
