Step 1

Wash, scrub and spiralize the cucumber, place in a salad bowl and set aside.

Step 2

De-stem and chop both purple and the Tuscan kale, place in a separate bowl, add salt, pepper, garlic powder and massage for approximately 5 minutes until it’s tender then add it to the cucumber.

Step 3

Cook quinoa according to package instructions.

Step 4

Add the finely chopped mint, parsley, quinoa, avocado and your protein of choice.

Step 5

Add Green Goddess dressing, toss to combine all ingredients and enjoy 🌿💚
