Step 1
Soak the cucumbers and scrub them well. If they are large, remove the seeds.

Chop the cucumbers and add them with the chopped onions and peppers in a large bowl.

Sprinkle the mixture with pickling salt and stir well to distribute the salt.

Add enough cold water to cover the vegetables.

Cover and allow to sit for 2 hours or overnight.

Place the relish into hot, sterilized canning jars, leaving 1/2 inch at the top.
Step 12
Seal and process the filled jars in a boiling water canner for 10 minutes.
Step 13
Remove the jars and allow to cool overnight.
