Vinegar, sugar, salt and onion add gentle, versatile flavor to this quick-and-easy cucumber salad recipe. All it takes is a few extra minutes of marination time to soften the bite of the onions and help the tangy seasonings infuse every bite of cucumber. Pair the salad with grilled hot dogs in summertime, or serve as a cool contrast to roast chicken in colder months.

 

Cucumber Salad

Followed recipe exactly. Way too salty and short on vinegar.

The longer it is cooled the more the cucumbers will break down.  Leftovers the next day are perfect!  I used apple cider vinegar and thinly sliced sweet onions-just a few slices.

One of my favorite variations on this came from the time I was living in Ukraine. Made with cabbage, cucumbers, sweet onion, fresh dill, a little vinegar and sunflower oil.  The cabbage is salted and then "kneaded" to break it down a little before adding the other ingredients. I spent many weekends eating this salad along with shashlik kabobs at dachas in the country side!

Can this be chilled for a longer period of time. If so, how long?

My mom was 100% Hungarian and she made this salad except she used regular white vinegar.  Also, just before serving, she would mix in about a tablespoon of sour cream.  Very refreshing!
