Amazing Curried Chickpea Salad with the best tahini dressing, packed with flavors and textures! Enjoy this for healthy lunches all week.

Curried Chickpea Salad

tbsp tahini

tbsp extra virgin olive oil

tbsp maple syrup

water

lemon

tsp apple cider vinegar

curry powder

turmeric

tsp salt

black pepper

15 ounces cans chickpeas, drained and rinsed

green onions

cilantro,

bell pepper, chopped

raisins

cashews, chopped

Whisk together all dressing ingredients in a small bowl. I blended mine in my nutribullet.

Place salad ingredients in a large bowl. Add dressing and toss to combine.

made this last night and seriously could have eaten the whole batch myself - delicious!

Love this recipe.  I am going to make it very shortly.   I was just wondering if you do anything with the aquafaba.    Hope you don't drain it off.  There are so many recipes for it online.   Makes vegan lifestyle a lot easier

Pretty solid recipe. As a hybrid of two dishes it doesn't quite deliver either at 100% - it's not as light as bean salad or umami as curry - but by upping the lemon I was able to push it more toward salad domain. 

I definitely recommend this recipe for its healthiness &amp; ease alone!

So perfect on these warm summer days! I made it with garbanzos I’d cooked in the slow cooker. It was a hit at our house. Next time I’ll try adding carrots per the suggestion below.

Oh my goodness! This is so stinking good it's not even funny. I have a feeling there's always going to be a container of this in my refrigerator.
