Step 1
Dice onion. Finely chop, grate or process cauliflower into the texture of rice (see our tips below). Remove casing from turkey sausage, if needed.
Step 2
In a skillet over medium heat, add 2 tsp olive oil. Once hot, add garlic and onion and cook, stirring often, until softened (2 to 3 minutes). Add turkey sausage and continue cooking, breaking up sausage into bite-sized pieces, until cooked through, another 5 minutes. Transfer mixture to a plate.
Step 3
Increase heat to medium-high and add cauliflower to skillet: cook without stirring until just starting to brown, 2 to 3 minutes. Stir and season with salt and pepper, then add 4 tbsp water and cover with a lid or foil. Cook until cauliflower is tender and liquid has evaporated, about 3 minutes more.
Step 4
Add sausage back to skillet and stir to combine with cauliflower. Cook 1 minute more, just until hot through. Turn off heat.
Step 5
In a separate skillet over medium heat, add remaining 2 tsp olive oil. Once hot, crack eggs into skillet and cook to your liking (about 3 minutes for soft yolks, up to 6 minutes for hard yolks). If making several servings, cook eggs in batches so as not to overcrowd the skillet.
Step 6
Top cauliflower hash with fried egg and enjoy!
