In the bowl of a stand mixer fitted with the whisk attachment (you can also do this in a mixing bowl with a hand-mixer; see notes), combine the instant coffee granules, granulated sugar, and hot water. Whisk on medium-high speed until pale, fluffy, and doubled in volume, about 7 minutes (the foam will begin to form at about 4 minutes, but it's best to continue mixing until a much fluffier foam forms at about 7 minutes). Serious Eats / Lorena Masso To serve, fill each glass three-quarters of the way full with your milk of choice. Using a spoon, top each glass with the coffee foam. Serve immediately.
