Step 1

Preheat the oven to 180°C / 160° Fan / Gas Mark Line a 1-pound loaf tin (9x19cm) with greaseproof paper and set aside.

Step 2

Add the dates to the mixing bowl and chop 5 Sec / Speed Transfer the dates into a bowl and add the water. Add the oats and bicarbonate of soda and leave to sit for 15 minutes.

Step 3

Place the walnuts in the mixing bowl. Chop 3 Sec / Speed 5.

Step 4

Add the date mixture, plain flour, ground cinnamon, mixed spice, butter, egg, baking powder and demerara sugar to the mixing bowl and combine 30 Sec / Speed 4.

Step 5

Pour the mixture into the prepared loaf tin and bake for 50 minutes until golden brown and a skewer inserted into the centre comes out clean.

Step 6

Leave to cool on a wire cooling rack before slicing. Enjoy!
