Step 1

In a mixing bowl, combine egg and buttermilk and beat.

Step 2

Add in buckwheat flour and baking powder. Beat all together until batter like consistency. The batter should be very thick. (If you feel that it is too thick add a tbsp of water)

Step 3

Heat saucepan to medium heat and add a tbsp of butter to line the saucepan. Add the batter to saucepan in approx. 20cm circumference or as if you are making pancakes for yourself.

Step 4

Flip pancakes when air bubbles start to appear, approx. 1-2 minutes or until golden brown.

Step 5

Cut each pancake using the cookie cutter into your desired pattern and place onto plate.

Step 6

Cutter banana and decorate plate, drizzle the peanut butter over the pancake and banana. Enjoy.
