Step 1

place sausages,bacon ,roughly sliced carrot, quartered onions , parsley & thyme in a large pot or skillet

Step 2

cover with cold water or stock

Step 3

bring to boil and simmer for at least an hour

Step 4

potatoes can be added at the beginning of cooking or anytime when simmering. If added at the start they will act as a thickner for the coddle. Adding later and cook for the last 20 mins or until done.

Step 5

Add seasoning to taste

Step 6

serve with fresh irish brown soda bread
