Step 1
In a dutch oven, heat oil over medium heat and add in the sausage then cook for 5-7 minutes;

Once the sausage has browned, remove and drain on a paper lined plate;
Step 3
Discard all but 1 tablespoon sausage drippings from the pan;
Step 4
Using the sausage drippings remaining, saute chopped onion and garlic over medium heat for 3-4 minutes;

Stir in the beef broth, water, diced tomatoes, shredded carrots, basil, oregano, tomato sauce, and drained sausage;
Step 6
Bring this to a boil, then reduce the heat to low;
Step 7
Simmer uncovered for 30 minutes;
Step 8
At 30 minutes, skim any visible fat from the top and add in the parsley then cover and cook for an additional 30 minutes;
Step 9
Add in the tortellini and cream then cook for another 10 minutes;
Step 10
Serve with additional fresh parsley, fresh basil, and grated Parmesan cheese.
