Step 1
Crack eggs into a bowl, add milk and beat the eggs until they're fully broken up and combined with the milk.
Step 2
Add a good swirl of olive oil to an oven-safe pan and set over medium-low heat. Add asparagus and scallions, and season with salt and pepper.
Step 3
After about 2 minutes, pour in the eggs. Tilt and rotate the pan so the bottom is covered. Continue lifting the edges and tilting so the top layer of eggs thins out and keeps cooking. Once it looks like it’s almost set, top with Muenster cheese and a sprinkle of Parmesan.
Step 4
Broil for about a minute in the oven to finsh cooking the top. Enjoy!
