Step 1
Lightly grease the slow cooker insert.
Step 2
Place the roast in the bottom of the crockpot.
Step 3
Wash the veggies and peel as desired. I left my potato skins on but not the carrots. It's a personal choice, you do as you prefer.
Step 4
Cut the potatoes, onions, and carrots into fairly large chunks or slices and place in a slow cooker.
Step 5
Pour the beef stock over the top and sprinkle with the seasonings.
Step 6
Cover, and cook on low for 6 to 8 hours or High for 4 to 5 hours.
Step 7
Place the beef roast in a large zippable freezer bag.
Step 8
Add your vegetables and sprinkle with the seasonings. (See notes here about potatoes)
Step 9
Pour the broth over the top.
Step 10
Lay flat to freeze and defrost overnight before cooking
