Soak your beans in water in large mixing bowl overnight in the fridge.
Step 2
Sauté onion, bell pepper, celery, and carrots in splashes of vegetable broth until soft and translucent. Add garlic and cook until fragrant, about 1 min.
Step 3
Add the rest of the broth, rinsed beans, tomatoes, seasonings, and 4 cups of water to the pot. Bring to boil. Make sure beans are covered in about 1 inch of liquid! (Add more water if needed.)
Step 4
Reduce to medium heat, vent the lid, and allow beans to continue boiling pretty vigorously for about 45 minutes - 1 hour, or until beans are nice and soft, stirring occasionally.
Step 5
Taste & adjust. Serve and enjoy!

Put all ingredients in pot.

Cook on LOW for 8 hours or HIGH for 4 hours.

NO NEED TO SOAK THE BEANS! Just rinse!

Throw rinsed dried beans into pot along with other ingredients.

Seal lid and vent. Cook in HIGH pressure for 1 Hour, 30 min.
