Step 1
Gather Ingredients. Melt Ghee in microwave.
Step 2
Add RAW CASHEWS to a Mixing Bowl. Pour Ghee or Cooking Oil on top. Mix well with a fork.

Transfer the cashews to the Air fryer basket in a single layer.
Step 4
Air fry at 360*f for about 7-8 minutes till they get nice Golden in color. If you want to keep them little pinkish, then air fry for 6 minutes. Shake these in between for even air frying.
Step 5
Take these air fryer roasted cashews in a mixing bowl. Add Chaat Masala or the seasoning of your choice (Cajun Spice Mix, Piri Piri spice Mix, salt & pepper, Pub Style, Ranch seasoning) while it’s hot. Mix with a fork.
Step 6
Cashews are soft when they are hot. They will harden up as they cool down. Don’t eat them while they are hot. It can burn your mouth.
Step 7
Serve these at room temperature. Or store these in air tight jar at the kitchen counter. They will last for good 3-4 weeks.
Step 8
Coating nuts with little ghee or oil helps them retain their sheen. Also it helps in making the seasoning stick to the nuts. Although you can skip using it or use very little amount.

Please do not eat the nuts super hot or else it can burn your mouth.
