Step 1
In a medium bowl mix all dry ingredients. Set aside.
Step 2
In separate bowl mix the milk, applesauce and butter. Whisk in eggs and vanilla.Set aside.
Step 3
Peel, core and chop apples. Add in lemon juice and mix well.
Step 4
Add flour mixture and egg mixture to the apples. Mix until dry ingredients are incorporated. Don't overmix.
Step 5
Heat about 2 inches of oil in a heavy skillet to about 375°. **You can test the heat by adding a teaspoon of batter to oil. If the oil is ready the batter will float and the oil will bubble around the batter. I generally turn the heat to medium-high after it is heated.
Step 6
Scoop about ⅔ cup of batter onto a large spoon and carefully push into oil. Use the spoon to flatten a little. Allow to cook for about 2 minutes per side. Drain on a rack over paper towels.
Step 7
Whisk the glaze together and place in a flat dish.After fritters have cooled for about 10 minutes, dip one side into glaze and place back onto rack until the glaze dries.
