Step 1

Pre-heat oven to 350°.

Step 2

Mix the cinnamon and sugar in a small bowl and set aside.

Step 3

Using a round cookie cutter (or a glass) cut out 12 circles from the frozen pie dough and place on a cookie sheet lined with parchment paper.

Step 4

Slice strips of the remaining dough with a pizza cutter (or knife).

Step 5

Place about 1 teaspoon of apple pie filling in the center of each cookie.

Step 6

Brush egg wash on the perimeter of the cookie dough, around the pie filling.

Step 7

Place the strips of dough over the pie filling, to look like apple pie.

Step 8

Using the round cookie cutter, cut the edges of the strips off.

Step 9

Sprinkle cinnamon sugar mixture on top of the cookies.

Step 10

Place cookies in pre-heated oven and bake for 15 minutes or until golden brown.
